Cranberry Citrus Knickerbocker Glory

Three days before John Jacob Astor IV died on the Titanic, he met with Archer Evermonde, who had just been appointed the Minister for Magic. It is unknown how Astor --a muggle real estate tycoon who built the famous Astoria Hotel in New York city-- even knew about the wizarding world. At the end of his honeymoon tour, Astor was meeting Evermonde with great resistance from his new bride who was also expecting their first child. Astor knew this was his only chance to get the information he needed for the sequel to his first novel, a science fiction work titled, Journey in Other Worlds. He convinced his wife to allow the meeting. Not much is known about what was discussed between Astor and Evermonde, but it is known that Astor talked about his recently built New York hotel, the Knickerbocker, and his,  then new ice cream dessert, called Knickerbocker Glory. Astor bragged about his bartender, who created the chilled sweet, and the other well-known concoctions including the Martini. Evermonde was so intrigued with the frozen confection, that he made it famous in the wizarding world 15-years before it became mainstream with muggles in New York.

Ingredients

 

Cranberry Compote

1-12 oz. package of cranberries

1 cup orange juice

1/2 cup sugar

 

Citrus Compote

5 oranges

3/4 cup orange juice

Juice of 1 lemon

Zest of 1 lemon, finely grated

1/2 cup sugar

 

Citrus Sauce

3/4 cup orange juice

Juice of 1 lemon

Zest of 1 lemon, finely grated

1 cup sugar

 

1 half-gallon vanilla ice cream

 

1 can Reddi Wip or any other real whipped cream

(I repeat, "real" whipped cream, NOT non-dairy)

STEP 1: Using a fine grater, remove the zest on both lemons. Separate the zest into two parts.

STEP 2: Remove the rind of the 5 oranges, by trimming them off with a knife, then cut them into chunks. Set aside.

STEP 3: Make the cranberry compote. Combine 1-12 oz. package of cranberries, 1 cup orange juice, and 

1/2 cup sugar in a medium-sized pot. Bring to a boil over medium-low heat. Cook until cranberries crack--about 5 minutes. Remove from heat.

STEP 4: Make the citrus compote. Combine the chopped oranges, 3/4 cup orange juice, the juice of one lemon, half the lemon zest, and 1/2 cup sugar in a medium-sized pot. Bring to a boil, and cook for five 5 minutes over medium-low heat, then remove from heat.

STEP 5: Make citrus sauce. In a saucepan, combine 3/4 cup orange juice, the juice of 1 lemon, the second half of the lemon zest, and 1 cup sugar. Bring to a boil over medium-low heat and cook for about 5 minutes or until it starts to thicken.

STEP 6: Put both compotes and lemon sauce in the fridge to cool. It is best to do this the night before.

STEP 7: Scoop vanilla ice cream into a bowl and wait for it to slightly soften, then mix in some citrus syrup. For every scoop of ice cream, add 1 tablespoon citrus syrup.

STEP 9: Layer the ingredients as shown in the photo.
